Easy Sheet Pan Nachos






Sheet pan nachos is my go to y'all when i'm crunched for time and momma has got to get food on the table? Anybody else know what i mean? Especially in the summer when we are staying outside till dark and eating supper at 8:30 at night. I know, I know its not helthy to eat that late but y'all we are over here trying to soak up every ounce summer that we can!lol




You guys sent tons of messages wanting all the details of these yummy nachos so i knew it was time to put it on the site so you could enjoy them this summer too. I am pretty sure its one of the easiest meals i cook and you can change it up and add to it as much as you like with your favorite toppings.I swap out the meat for whatever we have on hand, sometimes is chicken off the grill, turkey burger meat, or a quick rotissarie chicken from the grocery store.





Ingredients:

  • 1 bag tortilla chips

  • 2 medium roma tomatoes, chopped or if your out use diced rotel

  • 1 1/2 cups chopped chicken breast off the grill or sauteed turkey burger meat

  • 1 can black beans, drained and rinsed

  • 6 ounces colby jack cheese, grated

  • pickled jalapenos, optional

  • 1/3 cup Salsa

  • 1/4 cup sour cream

  • 1/4 cup heated Queso dip (I use

  • 2 TBS chopped cilantro

  • 1/2 large Avacado or substitute pre-made Guacamoly

  • Sweet corn (optional)







INSTRUCTIONS:


  1. Preheat the oven to 375 degrees F.

  2. Lay half of the tortilla chips onto a baking sheet in an even layer without gaps between the chips. Add a half of the shredded cheese, half of the tomatoes, half of the chicken or meat of your preference, and half of the black beans and corn.


  1. Add the rest of the chips over the top of that, then the remaining cheese, tomatoes, meat, black beans, and corn. Lastly add the pickled jalapeños over the top if you like those (optional).

  2. Place the nachos into the oven for 10 minutes. Remove from oven carefully.

  3. Heat Fresh Cravings Queso until warm throughout. Drizzle the queso over the top of the chips. Add 1/3 cup of Salsa  in the center of the nachos, then 1/4 cup or sour cream to the center.

  4. Garnish with sliced avocado or guac and cilantro if desired. Now its time to DIG IN!
